Every year, our summer evenings and weekends are filled with traditional family picnics, church outings and neighborhood BBQs. But by the end of June, I cringe at the thought of eating another potato salad. Here are a few of my favorite side dish recipes. Each is sure to jazz up your next potluck dinner.
Frog-eye Fruit Salad
1/2 package Acini de Pepe, cooked and drained
1 egg
1/2 Cup sugar
1 Tablespoon flour
dash salt
1 can pineapple, drained (reserve juice and add cold water to make 1 cup)
1 can fruit cocktail, drained
2 Cups mini marshmallows
1 C whipping cream, whipped
In a saucepan, beat the egg until foamy. Stir in sugar, flour, salt and pineapple juice. Cook over low heat until thick. In a large bowl, combine mixture with Acini de Pepe. Chill for at least 1 hour. Gently add pineapple, fruit cocktail and marshmallow. Fold in whipped cream. Chill.
Cookie Crumble Dessert Salad
1 large tub whipped topping1 large package vanilla pudding mix, dry
1 can crushed pineapple, drained
1 can Mandarin oranges, drained
1 1/2 Cups fudge striped cookies, crushed
Combine whipped topping, pudding mix, pineapple and oranges in a large bowl. Chill for atleast 2 hours. Immediately before serving, add crushed fudge striped cookies.
Broccoli Bacon Slaw
1 Cup mayonnaise
1/4 Cup sugar
1 Tablespoon red wine vinegar
1 1/2 pounds broccoli, chopped
1/2 small red onion, finely chopped
1 Cup raisins
10 strips bacon, cooked and crumbled
1/2 Cup sunflower seeds, shelled
In a large bowl combine mayo, sugar, and vinegar. Add broccoli, onion, rasisins and bacon. Just before serving, toss with sunflower seeds.
Chicken Salad with Grapes
3 Cups cooked chicken, chopped
1 bottle coleslaw salad dressing
2 Cups red seedless grapes, halved
16 ounce package large shell noodles, cooked and drained
3 C red delicious apples, diced but not peeled (optional)
3 bunches onions, chopped (optional)
1 Cup celery, chopped (optional)1 can cashews (optional)
Combine all ingredients in a large bowl. Chill until ready to serve.
Cold Italian Pasta Salad
1 bottle Italian salad dressing
16 ounces rainbow rotini, cooked and drained
1 can black olives, drained and halved
1 small tomato, diced (optional)
Combine all ingredients in a large bowl and chill slightly. Stir before serving.
